Description

Quick and easy chicken fajitas cooked on a single sheet pan.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 2 tablespoons olive oil
  • Tortillas, for serving
  • Your favorite toppings (sour cream, salsa, etc.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken, bell peppers, and onion with olive oil and fajita seasoning.
  3. Spread the mixture in a single layer on a sheet pan.
  4. Bake for 20 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Serve in tortillas with your favorite toppings.

Notes

  • For spicier fajitas, add a pinch of cayenne pepper.
  • You can substitute chicken thighs for chicken breasts.
