A delicious Amish-inspired dessert featuring moist zucchini bars topped with rich cream cheese frosting.
Ingredients

- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- For frosting: 8 oz cream cheese, 1/4 cup butter, 2 cups powdered sugar, 1 tsp vanilla
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking pan.
- Mix zucchini, oil, sugar, eggs, and vanilla in a bowl.
- Add flour, baking soda, salt, and cinnamon. Stir until combined.
- Pour batter into prepared pan. Bake for 25-30 minutes.
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla.
- Spread frosting on cooled bars. Cut into squares.
Notes
- Squeeze excess moisture from zucchini before using.
- Store bars in refrigerator for up to 5 days.
- Can be frozen without frosting.
