Easy and healthy baked salmon and asparagus cooked in foil packets for a simple weeknight meal.
Ingredients

- 2 salmon fillets
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- 1 lemon, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Tear off two large pieces of aluminum foil.
- Place one salmon fillet on each piece of foil.
- Arrange the asparagus around the salmon.
- Drizzle with olive oil and season with salt and pepper.
- Top each fillet with lemon slices.
- Fold the foil to create sealed packets.
- Place the packets on a baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and the asparagus is tender.
- Carefully open the packets and serve immediately.
Notes
- You can add other vegetables like cherry tomatoes or bell peppers.
- For extra flavor, add a sprig of fresh dill or parsley inside each packet.
