Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 corn tortillas, cut into strips
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add beef and cook until browned.
  3. Add onion, garlic, and bell pepper. Cook until softened.
  4. Stir in diced tomatoes, beef broth, cumin, and chili powder.
  5. Simmer for 30 minutes.
  6. Fry tortilla strips until crispy.
  7. Serve soup topped with tortilla strips, avocado, and cilantro.
