Ingredients

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
  2. Add onion, carrots, potatoes, and garlic to the slow cooker.
  3. Pour in beef broth and stir in tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours.
  5. Remove the bay leaf before serving.

Notes

  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes of cooking.
  • Leftovers can be stored in the fridge for up to 3 days.
