Ingredients

- 1.5 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
- Add onion, carrots, potatoes, and garlic to the slow cooker.
- Pour in beef broth and stir in tomato paste, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Remove the bay leaf before serving.
Notes
- For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes of cooking.
- Leftovers can be stored in the fridge for up to 3 days.
