  • 4 cups watermelon, cubed or balled
  • 2 cups strawberries, hulled and halved
  • 2 tablespoons fresh mint, chopped
  • Juice and zest of 1 lime
  • 1 tablespoon honey (or maple syrup for vegan option)
  • Pinch of sea salt
  • Optional: 1/2 cup crumbled feta cheese
  • Optional: 1/2 cup cucumber, sliced thin or diced
  • Optional: Fresh basil, as a mint alternative or add-in

Instructions

  1. Wash and hull the strawberries, then slice them in halves or quarters depending on size. Cube or ball the watermelon, removing any seeds.
  2. In a small bowl, whisk together lime juice, lime zest, honey, and a pinch of sea salt to create the dressing.
  3. In a large mixing bowl, gently toss the watermelon, strawberries, and chopped mint.
  4. Drizzle the honey-lime dressing over the fruit and toss again gently to coat.
  5. If using feta or cucumber, fold them in gently at the end. Serve immediately or chill for up to 2 hours before serving.

Notes

Use chilled fruit for the best refreshing effect. Add the dressing just before serving to avoid excess liquid. Fresh mint or basil is key—skip dried herbs.
