- 2 cups strawberries, hulled and halved
- 2 tablespoons fresh mint, chopped
- Juice and zest of 1 lime

- Pinch of sea salt
- Optional: 1/2 cup crumbled feta cheese
- Optional: 1/2 cup cucumber, sliced thin or diced

Instructions
- Wash and hull the strawberries, then slice them in halves or quarters depending on size. Cube or ball the watermelon, removing any seeds.
- In a small bowl, whisk together lime juice, lime zest, honey, and a pinch of sea salt to create the dressing.
- In a large mixing bowl, gently toss the watermelon, strawberries, and chopped mint.
- Drizzle the honey-lime dressing over the fruit and toss again gently to coat.
- If using feta or cucumber, fold them in gently at the end. Serve immediately or chill for up to 2 hours before serving.
Notes
