Rich and decadent Biscoff Caramel Sticky Toffee Bars with a chewy toffee center and a biscoff cookie crust.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Biscoff cookie crumbs (about 15–20 cookies)
- 1 cup caramel sauce, divided
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the Biscoff cookie crumbs and half of the caramel sauce until evenly distributed. If using nuts, fold them in now.
- Spread half of the batter evenly into the prepared baking pan.
- Drizzle the remaining caramel sauce over the batter in the pan.
- Dollop the remaining batter over the caramel layer, spreading it gently to cover.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- For an extra Biscoff flavor, you can crush more Biscoff cookies and sprinkle them on top before baking.
- Ensure your caramel sauce is thick enough to create distinct layers. If it’s too thin, it may blend too much with the batter.
- Store cooled bars in an airtight container at room temperature for up to 3 days.
