Description

Rich and decadent Biscoff Caramel Sticky Toffee Bars with a chewy toffee center and a biscoff cookie crust.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Biscoff cookie crumbs (about 1520 cookies)
  • 1 cup caramel sauce, divided
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the Biscoff cookie crumbs and half of the caramel sauce until evenly distributed. If using nuts, fold them in now.
  7. Spread half of the batter evenly into the prepared baking pan.
  8. Drizzle the remaining caramel sauce over the batter in the pan.
  9. Dollop the remaining batter over the caramel layer, spreading it gently to cover.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For an extra Biscoff flavor, you can crush more Biscoff cookies and sprinkle them on top before baking.
  • Ensure your caramel sauce is thick enough to create distinct layers. If it’s too thin, it may blend too much with the batter.
  • Store cooled bars in an airtight container at room temperature for up to 3 days.
