Sweet and nutty cheesecake bars with a caramel topping.
Ingredients

- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
- 1/4 cup caramel sauce
Instructions
- Preheat oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter. Press into the bottom of an 8×8 inch baking pan.
- In a medium bowl, beat cream cheese and sugar until smooth.
- Beat in egg and vanilla extract until just combined.
- Spread cream cheese mixture over the graham cracker crust.
- Sprinkle chopped pecans over the cream cheese layer.
- Bake for 25-30 minutes, or until the edges are set and the center is almost set.
- Let cool completely.
- Drizzle with caramel sauce before cutting into bars.
Notes
- For a richer flavor, use a brown sugar and graham cracker crust.
- Chill bars for at least 1 hour before serving for best results.
