- 1 sheet of puff pastry
- 3 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 4 ounces goat cheese
- Fresh thyme sprigs for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a pan. Add onions and cook until caramelized, about 30-40 minutes. Stir in balsamic vinegar, sugar, salt, and pepper.
- Roll out the puff pastry and place it on a baking sheet.
- Spread the caramelized onions over the pastry.
- Crumble goat cheese over the onions.
- Bake for 20-25 minutes, or until the pastry is golden.
- Garnish with fresh thyme.
Notes
- You can add a sprinkle of grated Parmesan cheese before baking.
