Carrabba’s Copycat Chicken Soup

Description

Make delicious Carrabba’s chicken soup at home.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup small pasta, such as ditalini
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in chicken broth. Bring to a boil.
  4. Add cooked chicken, pasta, oregano, and pepper.
  5. Reduce heat and simmer until pasta is cooked, about 8-10 minutes.
  6. Season with salt to taste.
  7. Garnish with fresh parsley before serving.

Notes

  • You can use rotisserie chicken to save time.
