Classic Beef Stroganoff with Egg Noodles

Description

A comforting dish of tender beef in a creamy mushroom sauce, served over egg noodles.


Ingredients

  • 1.5 lbs beef sirloin, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1/4 cup dry sherry (optional)
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • 1 lb egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches; set aside.
  3. Add onion to the skillet and cook until softened. Add mushrooms and garlic; cook until mushrooms are browned.
  4. Sprinkle flour over the mushroom mixture; cook for 1 minute.
  5. Gradually whisk in beef broth and sherry (if using). Bring to a simmer.
  6. Return beef to the skillet. Reduce heat and simmer for 15-20 minutes, or until beef is tender.
  7. Stir in sour cream. Heat through, but do not boil.
  8. Cook egg noodles according to package directions.
  9. Serve beef stroganoff over egg noodles. Garnish with fresh parsley.

Notes

  • For a richer flavor, use heavy cream instead of sour cream.
  • If you don’t have sherry, you can substitute with a splash of dry white wine or omit it.
