Description
A simple and flavorful tomato soup with fresh basil.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup fresh basil leaves, plus more for garnish
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in crushed tomatoes and vegetable broth.
- Bring to a simmer and cook for 15 minutes.
- Remove from heat and stir in basil.
- Season with salt and pepper.
- Garnish with fresh basil before serving.
Notes
- For a creamier soup, add a splash of heavy cream or coconut milk.
- You can use fresh or dried basil.
