Classic Tomato Basil Soup

Description

A simple and flavorful tomato soup with fresh basil.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves, plus more for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in crushed tomatoes and vegetable broth.
  5. Bring to a simmer and cook for 15 minutes.
  6. Remove from heat and stir in basil.
  7. Season with salt and pepper.
  8. Garnish with fresh basil before serving.

Notes

  • For a creamier soup, add a splash of heavy cream or coconut milk.
  • You can use fresh or dried basil.
