These cinnamon rolls are made with cloud bread, offering a light and airy texture.

- 4 large eggs
- 1/4 teaspoon cream of tartar
- 3 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup powdered sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 300°F (150°C).
- Separate the egg whites and yolks into two clean bowls.
- In the bowl with egg whites, add cream of tartar. Beat with an electric mixer until soft peaks form. Gradually add granulated sugar and continue beating until stiff, glossy peaks form.
- In the bowl with egg yolks, add vanilla extract. Whisk to combine.
- Gently fold the egg yolk mixture into the egg whites.
- Line a baking sheet with parchment paper.
- Spoon the cloud bread mixture onto the parchment paper in a rectangular shape.
- Bake for 25-30 minutes, or until lightly golden and set.
- While the cloud bread is baking, prepare the filling. In a small bowl, mix powdered sugar, cinnamon, and melted butter until smooth.
- Once the cloud bread is baked, let it cool slightly.
- Spread the cinnamon filling evenly over the cloud bread.
- Carefully roll up the cloud bread.
- Slice the roll into individual cinnamon rolls.
- Serve and enjoy.
Notes
- For a richer flavor, use brown sugar in the filling.
- You can add chopped nuts to the filling for extra texture.
