Description
Cochon Confit à la Bière et Sirop d’Érable is a traditional Quebecois dish that combines slow-braised pork with the rich flavors of maple syrup and beer for a comforting, flavorful meal.

- 2 lbs pork shoulder or belly
- 1/2 cup dark maple syrup
- 1 1/2 cups amber beer
- 4 cloves garlic, minced
- 1 onion, diced
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 tsp salt
- 1 tbsp olive oil
Instructions
- Marinate the pork overnight in a mix of beer, maple syrup, garlic, and herbs.
- Preheat oven to 300°F (150°C).
- In a Dutch oven, heat olive oil over medium heat and sear the pork on all sides until golden brown.
- Remove pork and sauté onions, garlic, thyme, and bay leaves until fragrant.
- Return the pork to the pot, pour in the marinade, cover, and braise in the oven for 2-3 hours until tender.
- Remove pork from the pot and let it rest before shredding.
- Reduce the braising liquid on the stovetop until thickened, then drizzle over the pork before serving.
Notes
Serve with mashed potatoes, roasted vegetables, or crusty bread. Pair with an amber beer or a medium-bodied red wine for the perfect experience.
