Description

A flavorful and easy-to-make soup with lentils, coconut milk, and curry spices.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 (13.5 ounce) can coconut milk
  • 1 cup chopped tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, curry powder, cumin, coriander, and red pepper flakes (if using). Cook for 1 minute more.
  4. Stir in lentils, vegetable broth, coconut milk, and tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.

Notes

  • Adjust the amount of red pepper flakes to control the spiciness.
  • Serve with a dollop of yogurt or a squeeze of lime for extra flavor.
