Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 (13.5 ounce) can coconut milk
- 1 cup chopped tomatoes
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, curry powder, cumin, coriander, and red pepper flakes (if using). Cook for 1 minute more.
- Stir in lentils, vegetable broth, coconut milk, and tomatoes.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of red pepper flakes to control the spiciness.
- Serve with a dollop of yogurt or a squeeze of lime for extra flavor.
