- 1 cup mixed berries (fresh or frozen)
- 2 cups all-purpose flour

- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix cottage cheese, eggs, oil, and vanilla until well combined.
- Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in berries.
- Divide batter evenly among muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
Notes
- If using frozen berries, do not thaw before adding to batter.
- Store muffins in an airtight container at room temperature for up to 3 days.
- For best results, use full-fat cottage cheese.
