Description

Cottage cheese and berry muffins are a delicious and nutritious breakfast or snack option. These muffins combine the creamy texture of cottage cheese with the natural sweetness of berries for a satisfying treat.


Ingredients

  • 1 cup cottage cheese
  • 1 cup mixed berries (fresh or frozen)
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix cottage cheese, eggs, oil, and vanilla until well combined.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Gently fold in berries.
  6. Divide batter evenly among muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • If using frozen berries, do not thaw before adding to batter.
  • Store muffins in an airtight container at room temperature for up to 3 days.
