Description

Delicious and healthy muffins made with cottage cheese and fresh berries. Perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk cottage cheese, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients. Fold in berries.
  5. Spoon batter into muffin cups. Bake for 20-25 minutes.
  6. Let cool before serving.

Notes

  • Use fresh or frozen berries.
  • Do not overmix the batter.
