Ingredients

  • 2 lbs chicken breasts, boneless and skinless
  • 4 cups chicken broth
  • 1 cup water
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • 2 tbsp unsalted butter, melted

Instructions

  1. In a large pot, combine chicken, broth, water, onion, carrots, celery, garlic, salt, pepper, and thyme. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked through.
  3. Remove chicken and shred it using two forks. Return shredded chicken to the pot.
  4. In a bowl, mix flour, baking powder, milk, and melted butter to form a dough.
  5. Drop tablespoon-sized portions of dough into the simmering broth.
  6. Cover and cook for 15 minutes until dumplings are fluffy and cooked through.
  7. Serve hot.

Notes

  • Use homemade chicken broth for better flavor.
  • Adjust seasoning to taste.
  • Add peas or corn for extra veggies.
