- 2 lbs chicken breasts, boneless and skinless
- 4 cups chicken broth
- 1 cup water
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 cup milk
- 2 tbsp unsalted butter, melted
Instructions
- In a large pot, combine chicken, broth, water, onion, carrots, celery, garlic, salt, pepper, and thyme. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked through.
- Remove chicken and shred it using two forks. Return shredded chicken to the pot.
- In a bowl, mix flour, baking powder, milk, and melted butter to form a dough.
- Drop tablespoon-sized portions of dough into the simmering broth.
- Cover and cook for 15 minutes until dumplings are fluffy and cooked through.
- Serve hot.
Notes
- Use homemade chicken broth for better flavor.
- Adjust seasoning to taste.
- Add peas or corn for extra veggies.
- Store leftovers in the fridge for up to 3 days.
