A simple and comforting pumpkin soup recipe.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 (15 ounce) can pumpkin puree
- 4 cups vegetable broth
- 1/2 cup heavy cream (optional)
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, ginger, cinnamon, and nutmeg; cook for 1 minute more.
- Stir in pumpkin puree and vegetable broth.
- Bring to a simmer and cook for 15 minutes.
- If desired, stir in heavy cream.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- For a smoother soup, blend with an immersion blender.
