• 4 tablespoons unsalted butter
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1/4 cup all-purpose flour
• 4 cups chicken broth
• 1 cup whole milk (240 ml)
• 1/2 cup heavy cream (120 ml)
• 2 cups cooked chicken, shredded or diced
• 1/2 teaspoon salt (or to taste)
• 1/2 teaspoon black pepper
• 1/2 teaspoon dried thyme
• 1/4 teaspoon paprika
• Optional: 1/2 cup diced carrots and celery for extra texture
How to make it:
In a large pot over medium heat, melt the butter. Add diced onion and cook until soft and translucent, about 4–5 minutes. Stir in garlic and cook for another 30 seconds until fragrant.
