Description

Creamy Alfredo Lasagna Soup is a rich, indulgent, and comforting variation of traditional lasagna. This one-pot dish combines the flavors of Alfredo sauce and lasagna for a creamy, cheesy, and satisfying soup perfect for any occasion.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1/2 cup cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup Parmesan cheese
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups fresh spinach (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, cook ground beef or sausage over medium heat until browned. Drain excess fat.
  2. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Pour in broth, bring to a simmer, then add heavy cream and cream cheese. Stir until melted.
  4. Break lasagna noodles into pieces and add to the pot. Cook for 10-12 minutes until al dente.
  5. Stir in mozzarella and Parmesan cheese until melted and creamy.
  6. Add fresh spinach (if using) and stir until wilted.
  7. Season with salt and pepper to taste, garnish with fresh basil, and serve hot.

Notes

For a lighter version, substitute heavy cream with half-and-half and use lean ground turkey instead of beef or sausage.
