A simple recipe for creamy broccoli cheddar soup.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot. Add onion and cook until softened.
- Add garlic and cook for 1 minute.
- Add broccoli and broth. Bring to a boil, then simmer until broccoli is tender.
- Blend the soup until smooth.
- Stir in milk and cheddar cheese until melted.
- Season with salt and pepper.
Notes
- For a thicker soup, add a tablespoon of cornstarch mixed with water.
- Garnish with extra cheese or a swirl of cream.
