Description

A comforting soup with chicken, noodles, and a creamy broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 8 ounces egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in garlic; cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add cooked chicken and egg noodles. Cook until noodles are tender, about 8-10 minutes.
  6. Stir in heavy cream. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

  • You can use rotisserie chicken to save time.
