Creamy Chicken Tortellini Soup

Description

A comforting soup with chicken, tortellini, and a creamy broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a boil. Add tortellini and cook according to package directions.
  4. Return chicken to the pot. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  5. Simmer for a few minutes until heated through. Garnish with fresh parsley before serving.

Notes

  • You can use any type of tortellini you like.
  • For a spicier soup, add a pinch of red pepper flakes.
