A comforting soup with chicken, tortellini, and a creamy broth.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil. Add tortellini and cook according to package directions.
- Return chicken to the pot. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Simmer for a few minutes until heated through. Garnish with fresh parsley before serving.
Notes
- You can use any type of tortellini you like.
- For a spicier soup, add a pinch of red pepper flakes.
