Creamy Mushroom Soup

Description

A simple and delicious creamy mushroom soup.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add mushrooms and cook until browned, about 5-7 minutes.
  5. Pour in vegetable broth and bring to a simmer.
  6. Reduce heat and simmer for 15 minutes.
  7. Stir in heavy cream. Season with salt and pepper.
  8. Garnish with fresh parsley.

Notes

  • For a thicker soup, blend a portion of the soup before adding the cream.
  • You can use any type of mushroom.
