Creamy Pea & Mint Soup

Description

A simple and refreshing soup.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 750g frozen peas
  • 1.2 litres vegetable stock
  • Small bunch of fresh mint, leaves picked
  • Salt and pepper to taste
  • Crème fraîche or yogurt, to serve (optional)

Instructions

  1. Heat the olive oil in a large pan.
  2. Add the onion and cook until softened.
  3. Add the garlic and cook for another minute.
  4. Add the peas and vegetable stock.
  5. Bring to a boil, then reduce heat and simmer for 5 minutes.
  6. Stir in the mint.
  7. Season with salt and pepper.
  8. Blend the soup until smooth.
  9. Serve with a swirl of crème fraîche or yogurt, if desired.

Notes

  • For a thicker soup, use less stock.
  • You can add a squeeze of lemon juice for extra flavor.
