Description
A simple and refreshing soup.
Ingredients
Scale
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 750g frozen peas
- 1.2 litres vegetable stock
- Small bunch of fresh mint, leaves picked
- Salt and pepper to taste
- Crème fraîche or yogurt, to serve (optional)
Instructions
- Heat the olive oil in a large pan.
- Add the onion and cook until softened.
- Add the garlic and cook for another minute.
- Add the peas and vegetable stock.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Stir in the mint.
- Season with salt and pepper.
- Blend the soup until smooth.
- Serve with a swirl of crème fraîche or yogurt, if desired.
Notes
- For a thicker soup, use less stock.
- You can add a squeeze of lemon juice for extra flavor.
