- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to a crock pot.
- Add onion, bell pepper, black beans, corn, diced tomatoes, taco seasoning, ranch dressing mix, and chicken broth. Stir well.
- Cook on low for 6 hours or high for 3 hours.
- Stir in heavy cream and shredded cheddar cheese 30 minutes before serving.
- Serve warm with optional toppings like sour cream, avocado, or tortilla chips.
