Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Transfer the beef to a crock pot.
  3. Add onion, bell pepper, black beans, corn, diced tomatoes, taco seasoning, ranch dressing mix, and chicken broth. Stir well.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Stir in heavy cream and shredded cheddar cheese 30 minutes before serving.
  6. Serve warm with optional toppings like sour cream, avocado, or tortilla chips.
