Creamy Tomato Basil Soup (No Cream!)

Description

A flavorful and creamy tomato basil soup made without any cream.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in crushed tomatoes and vegetable broth.
  5. Bring to a simmer and cook for 20 minutes.
  6. Remove from heat and stir in basil.
  7. Season with salt and pepper.
  8. Use an immersion blender to blend the soup until smooth.

Notes

  • For a smoother soup, strain it after blending.
  • Garnish with extra basil or a swirl of olive oil.
