Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz canned tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and sauté until soft.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in tomatoes and broth, then simmer for 15 minutes.
  5. Blend the soup until smooth.
  6. Return to the pot, add cream, basil, sugar, salt, and pepper.
  7. Simmer for 5 more minutes before serving.
