Ingredients

  • 1 medium cauliflower, grated (about 4 cups)
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Grate the cauliflower using a food processor or box grater.
  3. In a bowl, mix grated cauliflower, egg, salt, black pepper, garlic powder, cumin, and Parmesan cheese (if using).
  4. Divide the mixture into 6 equal portions and shape each into a taco shell on the baking sheet.
  5. Bake for 20-25 minutes until golden and crisp.
  6. Let cool slightly before filling with your favorite taco toppings.
