- 1 large English cucumber (or 2 Persian cucumbers), thinly sliced
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
- ¼ cup fresh basil leaves, torn or thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar or balsamic glaze
- Salt and pepper, to taste
Instructions
- Slice the cucumber into thin rounds. Halve the cherry tomatoes and drain mozzarella balls. Cut mozzarella into bite-sized pieces if needed.
- In a large bowl or platter, combine sliced cucumber, cherry tomatoes, and mozzarella.
- Tear or slice the basil and sprinkle over the salad.
- Drizzle with olive oil and balsamic vinegar or glaze. Season with salt and pepper to taste.
- Gently toss to combine and coat evenly. Serve immediately or chill for 15–20 minutes before serving.
