Ingredients

  • 1 large English cucumber (or 2 Persian cucumbers), thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
  • ¼ cup fresh basil leaves, torn or thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • Salt and pepper, to taste

Instructions

  1. Slice the cucumber into thin rounds. Halve the cherry tomatoes and drain mozzarella balls. Cut mozzarella into bite-sized pieces if needed.
  2. In a large bowl or platter, combine sliced cucumber, cherry tomatoes, and mozzarella.
  3. Tear or slice the basil and sprinkle over the salad.
  4. Drizzle with olive oil and balsamic vinegar or glaze. Season with salt and pepper to taste.
  5. Gently toss to combine and coat evenly. Serve immediately or chill for 15–20 minutes before serving.

Notes
