Ingredients

- 2 large English cucumbers, thinly sliced (or 4–5 Persian cucumbers)
- 1/2 medium red onion, thinly sliced
- 3/4 cup feta cheese, crumbled
- 2 tablespoons fresh dill, finely chopped
- Zest and juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- Salt and black pepper, to taste
- Optional: 1/2 cup cherry tomatoes, halved
- Optional: 1/4 cup kalamata olives, sliced
- Optional: 1/4 cup chickpeas, drained and rinsed
- Optional: Fresh mint or parsley, chopped
- Optional: A pinch of crushed red pepper
Instructions
- Wash and thinly slice cucumbers and red onion. Soak onion in cold water for 10 minutes if desired.
- In a small bowl, whisk together lemon zest, lemon juice, olive oil, salt, and pepper to make the dressing.
- In a large bowl, combine cucumbers, red onion, dill, and any optional add-ins. Toss with dressing until coated.
- Crumble feta over the top and gently mix to combine, leaving some larger chunks.
- Let salad sit for 10–15 minutes before serving for best flavor.
Notes
Use block feta for best flavor and texture. Chill before serving to allow flavors to meld. Great with grilled meats or as a light main with added protein.
