Description

Ingredients

  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 head cauliflower, chopped
  • 4 cups vegetable broth
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot.
  2. Add onion and carrots; cook until softened.
  3. Add cauliflower, vegetable broth, curry powder, and cumin.
  4. Bring to a boil, then simmer until vegetables are tender.
  5. Season with salt and pepper.
  6. Blend until smooth.
  7. Garnish with cilantro, if desired.
