Instructions
- Heat olive oil in a large pot.
- Add onion and carrots; cook until softened.
- Add cauliflower, vegetable broth, curry powder, and cumin.
- Bring to a boil, then simmer until vegetables are tender.
- Season with salt and pepper.
- Blend until smooth.
- Garnish with cilantro, if desired.
