Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 1 head of cabbage, chopped
- 8 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot.
- Add onion and carrots; cook until softened.
- Add cabbage, broth, and thyme.
- Bring to a boil, then simmer until cabbage is tender.
- Season with salt and pepper.
