Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups chopped green vegetables (e.g., spinach, kale, zucchini)
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot.
  2. Sauté onion and garlic.
  3. Add vegetable broth, celery, and carrots. Simmer.
  4. Add green vegetables. Cook until tender.
  5. Season with salt and pepper.
