Ingredients

- 500g carrots, peeled and sliced
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 clove garlic, minced
Instructions
- Preheat oven to 200°C (400°F).
- Toss carrots with olive oil, salt, and pepper.
- Spread carrots on a baking sheet and roast for 20 minutes.
- In a small saucepan, melt butter over low heat.
- Add honey, thyme, and garlic to the butter, stirring for 1 minute.
- Remove carrots from the oven, drizzle with honey glaze, and toss to coat.
- Return to oven for 5 minutes until caramelized.
- Serve warm.
Notes
- For extra crunch, roast carrots for an additional 5 minutes.
- Substitute maple syrup for honey if preferred.
- Garnish with fresh parsley before serving.
