  • 1 tsp salt

  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss carrots with olive oil, salt, and pepper.
  3. Spread carrots on a baking sheet and roast for 20 minutes.
  4. In a small saucepan, melt butter over low heat.
  5. Add honey, thyme, and garlic to the butter, stirring for 1 minute.
  6. Remove carrots from the oven, drizzle with honey glaze, and toss to coat.
  7. Return to oven for 5 minutes until caramelized.
  8. Serve warm.
