  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp peppermint extract
  • 23 tbsp heavy cream
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until batter is smooth. Pour into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes before transferring to a wire rack.
  6. For frosting, beat butter until creamy. Gradually add powdered sugar, peppermint extract, and heavy cream until smooth.
  7. Frost the cooled cake layers and sprinkle crushed peppermint candies on top.
