Simple and delicious crockpot recipes perfect for hot summer days when you don’t want to turn on the oven.


Ingredients

  • 1.5 lbs chicken breasts
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning
  • 1 cup salsa
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add black beans, corn, diced tomatoes with green chilies, taco seasoning, and salsa.
  3. Stir to combine.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred chicken with two forks directly in the crockpot.
  6. Serve hot with your favorite toppings.

Notes

  • This recipe is very versatile. Feel free to add other vegetables like bell peppers or onions.
