Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup eggnog
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and nutmeg.
  3. In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla.
  4. Alternately add dry ingredients and eggnog to the butter mixture, mixing until smooth.
  5. Pour batter into the pan and bake for 30-35 minutes, or until a toothpick comes out clean. Cool completely.
  6. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  7. Spread frosting over the cooled cake and sprinkle with nutmeg if desired.
