- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup eggnog
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking pan.
- In a bowl, mix flour, baking powder, baking soda, salt, and nutmeg.
- In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla.
- Alternately add dry ingredients and eggnog to the butter mixture, mixing until smooth.
- Pour batter into the pan and bake for 30-35 minutes, or until a toothpick comes out clean. Cool completely.
- For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
- Spread frosting over the cooled cake and sprinkle with nutmeg if desired.
