A simple lasagna soup recipe.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Brown ground beef in a large pot. Drain off any fat.
- Add onion and garlic; cook until softened.
- Stir in crushed tomatoes, beef broth, oregano, and basil. Bring to a boil.
- Add lasagna noodles; cook until tender, about 15 minutes.
- Stir in ricotta cheese.
- Top with mozzarella and Parmesan cheese.
Notes
- You can add vegetables like carrots or zucchini.
- Serve with garlic bread.
