Description
A simple soup with the flavors of stuffed peppers.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 28 ounces crushed tomatoes
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1 cup cooked rice
Instructions
- Brown ground beef in a large pot. Drain any fat.
- Add onion and garlic; cook until softened.
- Stir in bell peppers; cook for a few minutes.
- Add crushed tomatoes, beef broth, oregano, and basil. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in cooked rice.
- Serve hot.
Notes
- You can add a dollop of sour cream or a sprinkle of cheese.
- Use any color bell peppers you like.
