  • 1/2 cup brown sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk sugars, eggs, oil, and vanilla until smooth.
  4. Stir dry ingredients into wet ingredients until just combined. Fold in grated zucchini.
  5. Pour batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
