Ingredients

  • 4 large eggs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat, add grated zucchini, and cook for 5 minutes. Drain excess liquid.
  3. In a bowl, whisk eggs, milk, salt, and pepper.
  4. Stir in cooked zucchini, basil, Parmesan, and cheddar cheese.
  5. Pour mixture into a greased pie dish.
  6. Bake for 30-35 minutes until set and golden brown.
  7. Let cool for 5 minutes before slicing.
