Description

A refreshing cold soup inspired by gazpacho, made with fresh tomatoes and vegetables. Perfect for hot summer days.


Ingredients

  • 4 large ripe tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1 small red onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cumin
  • 1 cup water
  • Ice cubes (optional)

Instructions

  1. Wash and chop tomatoes, cucumber, bell pepper, and onion.
  2. Peel and mince garlic.
  3. Combine all chopped vegetables in a blender.
  4. Add olive oil, vinegar, salt, pepper, and cumin.
  5. Blend until smooth.
  6. Add water to adjust consistency if needed.
  7. Chill for at least 1 hour before serving.
  8. Serve cold with ice cubes if desired.

Notes

  • Use ripe tomatoes for best flavor.
  • Adjust seasoning to taste.
  • For smoother texture, strain before serving.
