Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted, plus more for the griddle
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, ginger, cloves, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a lightly buttered griddle or frying pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Stack the pancakes and serve with maple syrup.

Notes

  • You can add chocolate chips to the batter.
  • For extra flavor, add a splash of molasses.
