- 1.5 lbs flank steak
- 1 pint cherry tomatoes, halved
- 8 oz fresh mozzarella, cut into bite-sized pieces
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper. Set aside.
- Season the flank steak with salt and pepper.
- Grill the flank steak for 4-6 minutes per side for medium-rare, or to your desired doneness.
- Let the steak rest for 5-10 minutes before slicing it thinly against the grain.
- In a large bowl, combine the sliced steak, halved cherry tomatoes, mozzarella pieces, and chopped basil.
- Pour the balsamic dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- For an extra layer of flavor, you can marinate the flank steak in half of the balsamic dressing for at least 30 minutes before grilling.
- If you don’t have a grill, you can pan-sear the flank steak in a hot skillet.
