Description
A refreshing pasta salad featuring grilled halloumi cheese and zucchini, tossed with a lemon-herb vinaigrette.
Ingredients

- 8 ounces pasta (such as rotini or penne)
- 1 block (8 ounces) halloumi cheese, sliced
- 2 medium zucchini, sliced into rounds
- 1/4 cup olive oil, divided
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- While pasta cooks, heat 2 tablespoons of olive oil in a grill pan or outdoor grill over medium-high heat.
- Grill halloumi slices for 2-3 minutes per side, until golden brown. Remove from grill.
- Grill zucchini slices for 2-3 minutes per side, until tender and lightly charred. Remove from grill.
- In a large bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, mint, parsley, and minced garlic. Season with salt and pepper.
- Add the cooked pasta, grilled halloumi, and grilled zucchini to the bowl with the vinaigrette.
- Toss gently to combine. Serve immediately or chill for later.
Notes
- You can add other vegetables like cherry tomatoes or bell peppers.
- For a spicier kick, add a pinch of red pepper flakes to the vinaigrette.
