Grilled Halloumi and Zucchini Pasta Salad

Description

A refreshing pasta salad featuring grilled halloumi cheese and zucchini, tossed with a lemon-herb vinaigrette.


Ingredients

  • 8 ounces pasta (such as rotini or penne)
  • 1 block (8 ounces) halloumi cheese, sliced
  • 2 medium zucchini, sliced into rounds
  • 1/4 cup olive oil, divided
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. While pasta cooks, heat 2 tablespoons of olive oil in a grill pan or outdoor grill over medium-high heat.
  3. Grill halloumi slices for 2-3 minutes per side, until golden brown. Remove from grill.
  4. Grill zucchini slices for 2-3 minutes per side, until tender and lightly charred. Remove from grill.
  5. In a large bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, mint, parsley, and minced garlic. Season with salt and pepper.
  6. Add the cooked pasta, grilled halloumi, and grilled zucchini to the bowl with the vinaigrette.
  7. Toss gently to combine. Serve immediately or chill for later.

Notes

  • You can add other vegetables like cherry tomatoes or bell peppers.
  • For a spicier kick, add a pinch of red pepper flakes to the vinaigrette.
