Description

A refreshing salad with grilled watermelon, salty feta, and a tangy dressing.


Ingredients

  • 4 cups watermelon, cubed
  • 4 oz feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the watermelon cubes with olive oil.
  3. Grill the watermelon for 2-3 minutes per side, until grill marks appear.
  4. In a bowl, combine the grilled watermelon, feta cheese, red onion, and mint.
  5. Drizzle with balsamic glaze.
  6. Season with salt and pepper.
  7. Serve immediately.

Notes

  • You can add other grilled vegetables to this salad.
