A light and refreshing pasta salad featuring a creamy Greek yogurt dressing.
Ingredients

- 1 pound pasta
- 1 cup chopped cucumber
- 1 cup chopped bell pepper
- 1/2 cup chopped red onion
- 1/2 cup Kalamata olives, sliced
- 1/4 cup chopped fresh parsley
- 1 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cucumber, bell pepper, red onion, Kalamata olives, and parsley.
- In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, and oregano. Season with salt and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- For a heartier salad, add grilled chicken or chickpeas.
- Adjust lemon juice and seasonings to your preference.
