Healthy Greek Yogurt Pasta Salad

Description

A light and refreshing pasta salad featuring a creamy Greek yogurt dressing.


Ingredients

Scale
  • 1 pound pasta
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper
  • 1/2 cup chopped red onion
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup chopped fresh parsley
  • 1 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cucumber, bell pepper, red onion, Kalamata olives, and parsley.
  3. In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, and oregano. Season with salt and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
