Description
A rich and flavorful Irish-style beef stew made with tender beef, vegetables, and Guinness beer for depth.
Ingredients

- 2 lbs beef chuck, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup Guinness beer
- 4 cups beef broth
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic and tomato paste. Cook for 1 minute.
- Pour in Guinness beer and scrape the bottom of the pot.
- Return beef to the pot. Add beef broth, bay leaves, and thyme.
- Simmer for 2 hours or until beef is tender.
- Season with salt and pepper before serving.
Notes
- For best flavor, use a good-quality beef broth.
- Serve with crusty bread or mashed potatoes.
- Leftovers taste even better the next day.
