Description

A rich and flavorful Irish-style beef stew made with tender beef, vegetables, and Guinness beer for depth.


Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup Guinness beer
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Stir in garlic and tomato paste. Cook for 1 minute.
  5. Pour in Guinness beer and scrape the bottom of the pot.
  6. Return beef to the pot. Add beef broth, bay leaves, and thyme.
  7. Simmer for 2 hours or until beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • For best flavor, use a good-quality beef broth.
  • Serve with crusty bread or mashed potatoes.
